Probably the spiciest Chorizo in the world! Our customers asked for spicier chorizo so we created the Extra Piquante. But some asked for an even spicier product. We experimented with some of the hottest chillis in the world and finally (after some pain!) settled on our ingredients. We start with the outright heat of the Ghost Chilli Pepper and then complement that with the fruity inferno of the hottest chilli in the word – the Carolina Reaper. A recent holiday in Italy for our founder, Tracey, was the perfect opportunity to sample a wide range of artisanal Italian charcuterie. Handmade with pork from our pasture-raised Manx Rare Breed Tamworth pigs. Our Chorizo is slow cured the traditional way and uses authentic Spanish Pimention Paprikas. Having been avid fans of European charcuterie for over 20 years we have sampled almost every variation available. A firm favourite is the finest chorizo from Spain. It comes as no surprise then, that the first charcuterie produced byClose Leece Farm was a Manx Chorizo. After much experimentation, the production technique and blend were perfected. Only the finest ingredients were considered worthy, from the wine to the various Pimentons. The result is a satisfyingly spicy cured meat, enhanced by the succulent fat of the rare breed Tamworth pigs. Perfect with light-bodied red wines. However, we always prefer a glass of Rioja! Handmade with pork from our pasture-raised Manx Rare Breed Tamworth pigs, our slow cured Manx Kielbasa has notes of juniper berries and marjoram, alongside a traditional blend of herbs and spices. Winner of a Great Taste Award, 2018.  Great Taste Awards Judge’s comment – “A really generous sausage with deep savoury aromas.   The well judged ratio of fat to meat.  Sweet creamy flavours from the fat and deep meaty notes from the pork with a deliciously smooth finish in the mouth” After the success of our chorizos and salamis, we wanted to produce a charcuterie that showcases the flavour of our meat and the quality of the fat. Working with a Polish chef, who has been with us for many years, we focused on developing an unsmoked Polish Kielbasa. There is a wide range of such sausages and we tried many, finally deciding upon this wonderful recipe. The surprise is the delicate fruity note of juniper berries, balanced with marjoram.We believe this brings a very different product to the British Charcuterie scene. Size: 100g. Our slow cured Chorizo Extra Piquante uses a blend of three types of chilli pepper for a building heat as well as authentic Spanish Pimention Paprikas. Winner of a Great Taste Award, 2018.  Great Taste Awards Judge’s comment – “Classic looking and coloured chorizo salami, nice and moist. An instant hit of chilli which may be a bit too strong for more delicate palates certainly lives up to its extra spicy claims.” We received great feedback from our customers and judges for our chorizo. It is well spiced but there was a clear demand for a spicier sausage. Accordingly, we have taken our original recipe and increased the flavouring. The pimenton, garlic and cayenne are not shy, but still, let the flavour of the wonderful Tamworth meat come through. For those with a taste for all things spicy, this chorizo will not disappoint. Rare breed pork Tamworth. The quality of the shoulder joint and neck of our Rare Breed pasture-raised Tamworth pigs is exceptional. We have used it in all of our charcuterie and serve it in our café and restaurant with great success. So there was a certain inevitability to us developing a beautiful Coppa. Our master butcher prepares the joint carefully and we hang it for three months following the curing period. The final Coppa has a beautiful marbling and is a treat for lovers of charcuterie. Perfect at the centre of a charcuterie board or served solo with crusty bread and cheese.
